Quick Dinner

I tend to spend more hours than I would like to admit looking at recipes and baking tips. Wednesday I came across a lasagna recipe and knew exactly what we were having for dinner. It was so easy, unique and delicious! 

Here are all the ingredients! 

Mix all the delicious cheese's together with some italian seasoning

Put a layer of Wonton wrappers in a cupcake pan

Followed by a layer of Sauce

and cheese!

Next you dip a wonton wrapper in water so when you put it on it seals with the other wrapper

then some more cheese and it is ready to bake for 12 minutes and eat!!


It was really yummy and cute! The only thing we would have changed was maybe adding some garlic or  something to all the extra wonton. In general it was so easy and perfect for a busy night!


We are off to Daytona for the weekend, I am really looking forward to having some time with friends and the sun!

Lusting

I am an online shopping/browsing addict. There should really be a 12 step program for people like me. If a website has a "wish list" option, you can probably bet I have one, and that list is probably rather long. Since I am not exactly living with a money tree in the backyard I am also a huge bargain shopper, I will amazon, overstock.com, ebay, google coupons and anything else that might knock down the cost and shipping. I am also aware that I might LOVE something today and not so much next week, so I tend to add it to a list and look at it a while later, if it is still living in the lust side of my brain then I will consider it. 

I have always been a huge fan of keeping wish lists on different websites because when Christmas and my birthday come up I can never really think of anything that I would like. Having an ongoing list all year not only helps with those times, it is also super easy for my family to click and ship (living in different countries online shopping/shipping saves us all) plus that way I can send links to places where I have already found the cheapest place. There is just no need for anyone to ever pay full price when the exact same thing is discounted somewhere else.  

So here are my current obsessions, some are dreaming just slightly bigger than others... 

OPI Texas Line. Holy cowboy am I in love. Maybe it's my Texas roots coming out but I am obsessed with San Tan-Tonio and Big Hair..Big Nails

Nixon watches. Mister has me addicted. Every time we go to any store that sells these you better believe I am trying them on, loving life and sobbing as I have to give them back. I also like to talk about them like I am going to own one in the near future, just can't decide which one is best for me. I am OBSESSED with the marmalade one (so not long term realistic), I droll over the rose gold and just don't think life could ever be complete without the tortoise. ahhh Nixon, just don't know how I ever lived before them.

Too Faced eyeshadow duo's. I love every too faced product I have ever tried. I swear by their "shadow insurance" and use it everyday. I also love that if I use it with a cheaper eye shadows they help them feel and look higher end. Coca Puff&Honey Pott and Ooh&Aah are on the top of the list for the duo's.

As I have confessed about my wish list's that could probably be considered a novel, most of that content is on chefs catalog.Kitchenaid Pro 620, anything Le Creuset, and I do mean anything, in kiwi and caribbean are on the top of the list. They make my knees weak.


As the winter season has come to an end here, my lusting over the most perfect pair of knee high brown boots is slowly fading away until next year, however in comes last years desire of Hunter rain boots.I love them in dark green and graphite.

Then there is my endless search for perfect cotton dresses that I am certain will continue until the day I die.

Wings

So last week Mister and I made some delicious wings inspired by Pioneer Woman. It gave us a perfect opportunity to use our giant bowl we bought a few months ago and were super excited about buying but yet to use! 

While Mister likes his hot and spicy I prefer honey bar-b-q! So we split the wings in half and had some of each!

First we put each half in a bowl 

Then added the sauces and started tossing the wings around. We added a bit more honey to the BBQ sauce


We put them on pans lined with aluminum foil, and baked them, adding more sauce half way through



Then they were all set, paired with celery and carrot sticks!! It was seriously delicious and super easy


I think this is something that we will end up doing a few more times, it was seriously delicious and easy enough for a weeknight!

Flying by!

After a week of searching for my camera charger and finally just ordering a new one off ebay, which will arrive in the mail today, I finally found the charger... in the random electronics bag in the closet...where it belongs. It normally lives in my camera case so everything is kept together, but my old camera charger is in that bag so I thought it was worth a shot and sure enough, there it was. Leave it to me to be too organized! So pictures will be uploaded tonight!

Mister and I had a fairly busy weekend and when I sat down to look at the rest of the year it seems this entire year is going to be pretty busy! Thursday night we went to a trivia night at a local place called graffiti junktion with Craig and his friend Holly. 
 It was really fun and one of the best burgers I think I have ever had. We also went to dinner with them Friday and then saw Holly's friend play live music at Orlando Brewery, where I ended up with a beer that not only looked like but also tasted like drawn butter. It made for good conversation but not so good drinking. 

Saturday I organized a bit and realized that either I am out of town, Mister is out of town, or we are both out of town at least once a month every month this year! 

January - We went to New Orleans for the Mardi Gras ball
Mister picked up his new car
February - We are going to Daytona for a weekend long car show this weekend
Mister is currently flying to new york to pick up a car and drive it back tonight/tomorrow for work
March/April - Cruise with the parentals!!!!
May - 5 day trip to Helen, GA for a car show that I am really excited about
Trip to Miami for a friends graduation
June - Mister is heading up to the Dogfish Head Brewery for his and Craig's birthdays
July - I will be celebrating my birthday (a week after) with my FAMILY in Calgary!!
July, August, September - Mister is gone a week each month for a show
October - Possible mini trip/mini cruise with some friends
         Hopeful annual girls weekend in Miami
November - Heading up to Delaware with the Mister for thanksgiving at Dogfish Head for the mystery beer release
December - Christmas in Canada!

So needless to say my calendar has all sorts of things going on in it which is really exciting, but tiring too!

Now that I have my camera back up and running I am really anxious to get back on the cooking challenge. I have quite a few recipes saved and have been reading up on lots of tips and tricks. I am hoping to make something involving crepes this week. We went to an art festival on Saturday and they were making fresh crepes which has had me dreaming about them since!

Full of love

I hope everyone had a wonderful hearts and hugs day!! Since I seem to have misplaced my camera charger I have not been able to upload the pictures of the wings that we made last week, or the cookies I made Sunday. I am going to make that a priority tonight, but until then I figured since yesterday was a day for celebrating love, today I will talk about things I am loving!

To start it off I am loving my favorite flowers that Sean sent me yesterday!

I love our Magic Bullet. I know you have seen the commercials and thought it was silly, but we use this thing every single day. I have a delicious fruit protein smoothie for breakfast every morning, and after the gym Sean makes shakes. It is the most convenient thing in the world and is super easy to clean. Sean thought I was silly for getting so excited when I won the deluxe version at my work Christmas party but it really has made life wonderful and delicious!

I am a very loyal mascara customer. In high school I was a BADgal lash by benefit junkie, then I moved on to Cargo's Texas Lash and remained there for years. I loved Texas Lash because it creates tubes on each eyelash and did not flake off onto my face half way through the day. I apparently am a freak when it comes to mascara because it always ends up everywhere but my eye lashes by the end of the day (it drove my mom insane for years, just ask her!) but with the individual tubes they stayed on all day. Well, last week I decided to try something new, insert my other love for the week, Too Faced Lash Injection. I have a few too faced products that I have been avid users of for a few years so I figured the mascara was worth a shot, and it's great! It is also a few dollars less than Texas Lash!! 
 Friday I met a friend at the mall for some browsing and happy hour, while I was waiting for her I made the mistake of allowing myself to venture into anthropologie. Big mistake. I knew it was not going to end well. I could live there and never leave. They have the most amazing aprons, like hundreds of aprons I would like to wear everyday. Adorable measuring cups that look like coffee cups. My favorite book in pop-up form. Owl cookie jars. Essentially, I knew it was a bad idea, but I went in anyway, and now I will spend the rest of the week drooling over the website.

Although there are a few other things I am loving, I will end with the best one. I love that in 38 days I get to see these faces!!!!

EPIC adventure

My mind has been completely taken over by the fact that in 43 days I will be in Miami with the mister meeting my PARENTS all the way from Africa so that we can get on a boat and float away for a week!!!! Specifically the NCL Epic. 

Sean and I did a week long trip on the Epic in October with stops in Roatan, Costa Maya and Cozumel and had an amazing time. The ship itself it pretty incredible with tons to do and lots of entertainment; so when it came time to picking out a holiday with my parents we were really leaning towards doing the other side of the Caribbean on the same ship.

Roatan
 This time we will be stopping in St Thomas, St Maarten and Nassau. Needless to say from the moment we booked this trip my mind has been all about the pre-trip shopping to distract me from the fact that it is still 43 days away.. 

I wrote a list of a few things that I would like for this trip and have started my online bargain hunting already! Thank the Lord for Skype, mom and I have been sending each other links and opinions on all of our picks so far, and with her help I picked out a new bathing suit! I am really excited about the racer back on it, it will be perfect for excursions and the ships water slides! I then began the hunt for cute/comfy dresses because I have a serious addiction to cotton summer dresses. I ordered this dress for night: 

and have been going back and forth about ordering this one for a day time around the ship (I also found it on sale cheaper so I might just have to pick it up!)
 

Other than that we went to the outlet mall a couple of nights ago and I picked up an awesome Oakley suitcase for a steal and another fun strapless cotton stretchy wonderful dress on clearance! I would like 1-2 more dresses, something white for the NCL white-out party, a nice pair of shorts and I should be all set! Now I just have to remember to not only hit the gym but stop looking at things like this, this and this. Wish me luck....

Super Bowl Snacks

This past weekend was the super bowl, which was an awesome excuse to make delicious corn dip and some pretty fantastic cookies! My mom got the recipe a couple years ago from a friend and it was an instant favorite in our house. I made the dip Saturday, it is always best to make it the night before you will be eating it so all the flavors can really mix together. The recipe can be found here. It is probably the easiest thing in the world to make! Last week Sean sent me a link to some cookies he found so Sunday morning I made smores cookies which were a perfect mix of all the traditional smores flavors without the camp fire!

Corn Dip
You take all the ingredients, drain them and dump them in a bowl!
Mix it all together, let it sit overnight in the fridge and serve with Fritos Scoops!
This picture really does not do the dip justice, the lighting was all funky, it is actually a delicious creamy white bowl full of heaven!
Before I go into the cookies here are a couple pictures of the canisters we picked up from Ikea around Christmas time, I LOVE them. I originally wanted them for keeping my baking ingredients in..



but then I decided I also wanted them for all of our pasta! We do not have much pantry space so we decided to get a book shelf with doors from Ikea. The top half of the door is glass so we could not really put our pantry items on the top half. I did not want to lose all that space so I thought if the pasta was displayed it could be pretty and practical! The bottom half of the doors are solid so it added a ton of storage space for us.


Now to the cookies!!! I was doing a balancing act of laundry (walking to and from the laundry room in the rain), making cookies, dealing with a cat who acts like we never spend any time with him and skyping with my awesome parents.. so I kind of sucked at taking pictures of the first steps... but essentially you take a rolling pin to some graham crackers to get crumbs, mix everything up (try not to eat half a bowl of dough...its yummy)


Plop them on the pan and cook for 7 minutes then take them out..


stick a few mini marshmallows and chocolate chunks into the cookies... 


Stick them back in the oven for a couple minutes and you have awesome cookies!! I took these to a super bowl party where they were deep frying EVERYTHING. I'm not going to lie, these suckers deep fried took it to an entirely new level of awesome...

Super Bowl!

I spent a good amount of time looking up some inspirational recipes to make this week, and then went home and made grilled cheese sandwiches and tomato soup because Mister was not feeling well. There is nothing better than that delicious combination when I am not feeling well, other than my mom making me a bed on the couch to cuddle up in! After that we have been pretty busy and by the time we are home from the gym we don't feel like cooking so it has been fruit/protein shakes for dinner. Hopefully tonight I will make something yummy!

In all my search for the perfect recipe for the week I kept coming across some awesome finger foods, appetizers and  deserts. There are some pretty awesome looking snacks for the super bowl this weekend that I would love to make, but since we are going to a friends and they have a ton of food already planned I will only be making a couple of things. I am planning on making the world's best corn dip, it is so super easy to make and Sean and I could probably eat an entire giant bowl of it ourselves, so I am only allowed to make it when we are taking it somewhere.

I have been debating between which desert item to bring. The party we go to always has a deep fryer and everyone bring items to be deep fried (oreos, snickers, cookie dough and other super healthy stuff) These awesome smores cookies look heavenly, but I have also been wanting to try out my new cookie press and whoopie pie pan that I got for Christmas!

Hopefully I will make something delicious, and I will be sure to take pictures of the process so I can show you all the delicious food! Until then my mind is going to somewhere dreaming of a beach as my mom and I try to finalize our March holiday plans!
